Ingredients
  

Vanilla Sponge

  • 2 3/4 cup Flour 330grams
  • 2 1/4 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter 240g at room temperatue
  • 1 1/2 cup Castor Sugar 300g
  • 6 Eggs room temperature
  • 1 tablespoon Vanilla extract
  • 1 1/2 cup Milk 360ml
  • 1 1/2 tablespoon Vinegar

Sugar Syrup

  • 3 tablespoon Sugar
  • 1/2 cup Water

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Butter your cake pans.
  • Add vinegar in milk. Heat it for a few minutes until it starts congealing. Let it rest.
  • Whisk together flour, salt, and baking powder and set aside.
  • In a bowl, cream butter and sugar together until smooth.
  • Add vanilla.
  • Add eggs one at a time and mix.
  • Fold in flour in the batter. Add milk and flour in batches.
  • Divide the batter equally in your cake pans. Bake for 30-40 minutes or until the toothpick comes out clean.
  • Boil water with sugar to create a sugar syrup. Heat it just until the sugar dissolves, do not let it caramelize.
  • Pour a few tablespoons of sugar syrup over the sponges to make them moist. Let the cakes rest at room temperature untill they cool down.
  • For assembling, put the first cake at the bottom, add buttercream icing and caramel, and place another cake layer on top. Repeat. Cover the entire cake with the buttercream icing and drip caramel over the sides using a piping bag.
