  • Medium saucepan


  • 1/4 cup Water
  • 1 1/2 cup Sugar
  • 1 cup Cream room temperature
  • 5 tablespoon Unsalted Butter room temperature
  • 1/2 teaspoon Salt add more if needed


  • Add water and sugar into a saucepan and stir until smooth.
  • Put the saucepan on low heat. Do not stir at this stage. Wipe down the sides of the pot occasionally.
  • When the caramel turns light golden in color take the pan of the heat.
  • Add butter and cream in the pan. Whisk.
  • Put the pan on low heat again and whisk vigorously until golden.
  • Pour the caramel into an airtight jar and store it in the fridge.
